Soigné

Dining is close to theatre. It stays with you as a fine experience when the service, the room, the food and the guest all breathe together, smoothly and with some elegance.

We took our cue from a word Chef Jun Lee had been holding onto — soigné — and set out to build a stage on which a well-composed run of service could be seen. A room where everyone inside it becomes a principal. A room able to hold whatever new attempt happens next.

That is Soigné. It was our first project in which we set out to raise what dining is worth, by planning the service sequence carefully and letting interior design carry it.
