‘다이닝’이라는 것은 한편의 연극과도 같다. 다이닝은 서비스의 주체, 공간, 음식, 그리고 고객의 호흡이 매끄럽고 세련되게 어우러질 때 훌륭한 경험으로 남는다. 우리는 이준 셰프가 마음에 두고 있던  ‘ Soigné ‘ 라는 단어에서 영감을 얻어, 하나의 잘 짜여진 서비스 과정을 보여줄 수 있는 ‘무대’ 를 만드는데 초점을 두었다. 그 안에 머무르는 모든 이들이 주체가 되는 공간, 그리고 그곳에서 벌어질 새로운 도전을 담을 공간, 그것이 스와니예이다.

This Michelin-starred Soigné restaurant provides one of the most exciting dining experiences in Seoul. Cuisine of Soigné represents the unique city, Seoul, where both heritage of Korea and diversity of international culture are mingling together by melting French, Italian, and American technique and flavour into the structure of Korean cuisine and offering constantly changing menu with lively and energetic service. It was our first project to define the value of dining better through the sophisticated planning of the service process based on interior design. Since its opening, Soigné is regarded as a forward-thinking restaurant that brought the new vision of restaurant industry to Korea.
